Chickpea Samosas

NUT FREE EGG FREE ~ SOY FREE ~ DAIRY FREE ~ FISH FREE ~ SESAME SEED FREE ~ VEGETARIAN

 

Ingredients:

  • 2 x 400g cans chickpeas, drained and rinsed
  • 1 x clove garlic
  • 1 x small bunch coriander
  • 1 x small red onion
  • 1 x small red chilli, optional, deseeded and chopped
  • juice and rind of 1 lemon
  • 1 packet chilled dairy-free and soy-free filo pastry
  • Oil spray
  • dipping sauce to serve (allergy appropriate)

 

Directions:

  • Preheat oven to 220 degrees C. Line a baking tray with non-stick baking paper
  • Place the coriander, garlic, onion, chilli, lemon rind, lemon juice and half of the chickpeas into a food processor and blend until the mixture forms a paste. Transfer the paste to a bowl and add the remaining chickpeas. Mix well
  • Lay a sheet of filo pastry on the bench and spray with oil. Fold the sheet in half lengthways, then in half again. Spray with oil
  • Place 2 tbsp of the mixture on one side of the pastry. Fold one corner diagonally over the filling, and make a small fold along the open edge to sSereal the triangular parcel
  • Place the samosa on the prepared baking tray, and repeat the process with the remaining mixture
  • Spray all of the samosas with oil, then bake for 15 mins or until the pastry is golden brown and crispy
  • Serve with dipping sauce (allergy appropriate)
