Fruit Salad with Quinoa

Quinoa grain with Strawberries, Blueberries and a yummy honey lime dressing

 

Ingredients:

  • 1 cup Quinoa
  • 2 cups Water
  • Pinch of salt

for the honey lime dressing:

  • Juice of 1 large lime
  • 3 tbsp honey
  • 2 tbsp fresh mint, finely chopped

for the fruit salad:

  • 11/2 cups Blueberries
  • 11/2 cups Strawberries, sliced
  • 11/2 cups Mango, chopped into cubes or slices
  • Mint for garnish, chopped finely

Method:

  1. Rinse the quinoa under cold water, using a strainer.
  2. Add quinoa, water and salt to a medium saucepan and bring to the boil over a medium heat. Boil for 5 mins. Turn heat to low and simmer for about 15mins or until water is absorbed. Remove from heat and fluff with a fork. Leave quinoa to cool.
  3. For the dressing - In a medium bowl whisk the lime juice, honey and mint together until combined.
  4. In a large bowl combine quinoa, blueberries, strawberries and mango. Pour the honey lime dressing over the fruit salad mix and fold through
  5. Enjoy!!
