Peach & Strawberry Coconut Milk Paddlepops

PEANUT FREE  .  SOY FREE .  DAIRY FREE  .  WHEAT FREE   .  SESAME SEED FREE  .  VEGETARIAN

 

Ingredients:

  • 1 tin of Coconut Milk
  • 1 peach
  • Handful of strawberries
  • 1/4 cup of Agave Nectar (optional for sweetness)

 

Equipment:

  • Blender
  • Paddle Pop moulds
  • Small saucepan

 

Directions:

  • Put the strawberries into the blender and blitz until they're smooth.
  • Spoon and divide the strawberry mixture between your paddle pop moulds, then place them into the freezer while you make the icecream
  • In a small saucepan boil the peach until it's tender to touch. Then peel the skin off, chop it up and add the peach flesh to the blender
  • Open your can of coconut oil, but don't shake the can – when you open it, the “fat” from the coconut will be at the top (a thick, creamy consistency) and the water will be at the bottom of the can. Scoop only the coconut milk fat into the blender, not the water.
  • Blend the peach & coconut milk fat together until smooth. 
  • Check the strawberry mixture in the bottom of your paddle pop moulds. Once it is frozen you are ready to add the coconut milk mixture, then freeze.
  • Enjoy!!

 

* If you feel this mixture isn't sweet enough for you, you can add 1/4 cup of agave nectar. My 3 yr old loved it without any added sweetener!
